Mini Pancake Muffins

Want a quick and easy recipe that your little one will love? My daughter has become a picky eater and I have had to be very creative with my meal prepping lately. This morning I got up and did not have much time to make breakfast so this was easy to make and wait for the oven to bake it me instead of my standing over the stove to cook my pancakes. 

What you will need: 
  1. Aunt Jemima Pancake mix (use just add water OR add egg and milk) 
  2. Prepare a few mystery fillings: strawberry pieces, banana pieces, chocolate chips, nuts, cinnamon, basically anything you like.
  3. Mini muffin trays 
  4. Oil spray or butter
Instructions: 
  1. Preheat oven to 350 degrees. 
  2. Prepare the pancake mix based on instructions on package.
  3. Spray the muffin trays with oil or coat them with butter.
  4. Add your mystery toppings in the tray. I used cut up strawberries and bananas. I did a few only strawberry and a few only bananas and some I mixed both flavours. 
  5. Next, pour in the pancake mix to the top. 
  6. Bake at 350 degrees for 15-20 minutes. 
  7. Let cool for 1-2 minutes before serving with syrup.
NOTE: If you use chocolate chip or nuts add a little pancake mix then add your toppings in the middle and top it off with more pancake mix.

Every bite was a surprise for Adriana and that's what made things easier. She also helped me prepare the pancake mix so she was willing to try everything. All in all it was a hit! If you have too many left over that's fine. Place them in the fridge and reheat when you want to serve for a snack or breakfast for the next morning.
